AIP Slow Cooker Pulled Pork

My favorite part about this recipe is that it takes 15 minutes to throw together and goes a long way for the week ahead.

Ingredients

Prep time: 15 minutes

Cook time: 8 hours

Utensils: Slow cooker

Ingredients

1kg pasture-raised pork loin

1 apple, cored and roughly sliced

4 large garlic cloves, peeled and halved

1 red onion, peeled and roughly chopped

2 sprigs fresh rosemary

2 cups bone broth

1 tbsp molasses

1 1/2 tbsp sea salt

1 tsp onion powder

1 tsp garlic powder

1 tsp dried thyme

Method

1. Chop the apple, red onion, and garlic cloves and add it to your slow cooker with the bone broth.

2. Rub the pork loin with the molasses. It would help if you did this first so that the ingredients in step 3 stick to the pork.

3. Combine the sea salt, onion powder, garlic powder, salt, dried thyme in a bowl.

4. Once you've combined it, use your hands to rub it evenly on the pork loin.

5. Add the pork loin to your slow cooker and top it with the fresh rosemary.

6. Cover and cook on low for 8 hours.

7. Once it is done, use a fork to break the meat apart. 

Serve with olives, avocado, lettuce, sliced apple and cucumber. Add a drizzle of AIP basil pesto for more flavor.
