Simple Cauliflower 'Rice'
When you embark on the AIP journey, you start with an elimination phase that excludes all grains, including rice. Cauliflower rice is my go-to substitute for rice - the key is to not over pulse it when you prepare it AND not overcook it.
What to do with Cauliflower rice?
Think of cauliflower rice as the perfect substitute for rice. It's the ideal addition to stews and curries. I love pairing mine with my AIP Chicken Coconut Curry.
Ingredients
Servings: 4
Prep time: 15 minutes
Cook time: 5 minutes
Utensils: Food processor
2 Cauliflower heads, roughly chopped
1 tbsp organic coconut oil
2 garlic cloves peeled and crushed
2 tbsp sea salt
1 tbsp coriander, finely chopped
Method
1. Add your cauliflower to the food processor in small batches and pulse for a few seconds at a time. Until it resembles the consistency of rice. Careful not to over process it to avoid it turning into mush when you cook it.
2. Heat the coconut oil on medium heat in a pan then add all your remaining ingredients.
3. Cook for about 3-5 minutes stirring until your desired level of crunch.
I like to serve mine al-dente.
