AIP Chicken Meatballs Recipe

These chicken meatballs are so delicious that I deliberately make an extra mini meatball for my husband and me to share before packing it away for the week’s meal prep.


Nutrient-density

The ingredients that don't only make this recipe super tasty but nutritious too are the shredded sweet potato and fresh parsley. Sweet potato is an excellent source of soluble fiber that feeds the friendly bacteria that live in our gut. Fresh parsley is an excellent source of Vitamin C and helps boost the body's detoxification process. One of the reasons I always choose pasture-raised chicken meat and eggs is that they have so more iron and omega-3s than conventionally raised chickens.

Ingredients

Servings: 15

Prep time: 20 minutes

Cook time: 30 minutes

1kg Ground Chicken, pasture-raised

1 yellow onion, finely chopped

3 garlic cloves, minced

1 tbsp sea salt

1 tsp onion powder

1 tsp garlic powder

2 tbsp fresh parsley, finely chopped

2 cups sweet potato, peeled & shredded


Method

  1. Preheat your oven to 180C/355F.

  2. Use your hands to combine all the ingredients in a mixing bowl.

  3. Use your hands to roll your mixture into round balls.

  4. I was pretty generous with these, so I got 15 meatballs out of it.

  5. Add them to your roasting tray and cook for approx. 25/30min.

  6. Serve with rucula and a drizzle of AIP basil pesto.
