Beef Liver with Pancetta
Until I switched my mindset around food, the thought of eating liver honestly grossed me out, now I see food as medicine that either contributes to healing or feeding my disease.
The herbs and pancetta in this Beef Liver recipe adds a saltiness and flavor that truly elevates this humble beef liver dish. I usually serve a couple of spoons with a side of roasted vegetables, or sliced avocado.

Is pancetta AIP friendly?
Yes, pancetta is AIP friendly. Be sure to check the ingredient list of the pancetta you buy. Pancetta is a good source of protein with stable, saturated fats according to Dr. Sarah Ballantyne, and even though it’s high in Sodium those of us on Paleo and/or not consuming a ton of processed and ultra-processed foods which are high in sodium, are safe to consume in moderation!
Ingredients
Servings: 6
Prep time: 10 minutes
Cook time: 25 minutes
2 tbsp Organic Coconut Oil, or animal fat
1 x Small Yellow Onion, finely chopped
1 x Garlic clove, crushed
250g Pasture-raised Beef Liver, cut into thin strips
1 tsp Sea Salt
1 tsp onion powder
1 tsp garlic powder
A handful of fresh herbs like Thyme or Rosemary
Method
1. Heat your coconut oil or animal fat in a pan.
2. Add your onions, cooking on medium heat till they are translucent.
3. Add your garlic and cook for another 30 seconds.
4. Add the pancetta to your pan and cook till they start to crisp.
5. Add your liver, salt, powders and fresh herbs and combine.
6. Cook for about 15min total until your livers are just pink in the centre and no longer running any red.
Note: A little goes a LONG way so you only need a tbsp a day to benefit from the nutrients found in liver.
