Paleo Carob Banana Bread
This paleo banana bread recipe is gluten-free and deliciously chocolatey!
My husband and I love to pair a slice with a cup of tea, or you can smother it with one of your favorite nut-butters for a tasty snack.
What is Carob powder?
Carob powder is a delicious alternative to cacao, so I tend to use it quite often in my baking. You can easily replace the carob powder and carob nibs in this recipe with cacao if you prefer.
Ingredients
Prep time: 20 minutes
Cook time: 35 minutes
Utensils: Blender
4 x Small ripe bananas
1 x Plantain
2 x tbsp coconut oil
1/4 cup coconut butter
2 x eggs, pasture-raised
1/2 cup coconut flour
1/4 cup cassava flour
1/4 cup tapioca starch
2 tbsp coconut sugar
2 tbsp carob powder
1 cup carob nibs
1 tsp ground cinnamon
1 tsp baking soda
Method
1. Preheat your oven at 175C/350F.
2. In a food processor, add the bananas, plantains, coconut oil, coconut butter, and eggs and blend until they are well combined.
3. Use a rubber spatula to mix all the remaining ingredients in a large mixing bowl.
3. Add the wet ingredients from the food processor to the dry ingredients in the mixing bowl and mix well.
4. Pour the batter into a greased loaf tin and use the spatula to smooth it out.
5. Bake for 35-40minutes.
Serve it with a cup of tea!
