Instant pot bone broth

Different cultures throughout history have consumed bone broth. Apart from its numerous gut-healing benefits and nutrients, it is also a tasty addition to soups and purées. 

As Chris Kresser mentions in his article, eating nose to tail (that is consuming all parts of the animal) is a core component of functional medicine. It provides the body with essential nutrients and amino acids to stay healthy.


The benefits of drinking bone broth

Preparing bone broth from bones of pasture-raised, organic animals will maximise the nutrients you derive from it. You can either use prebought grass-fed bones or roast a whole chicken and reserve the carcass and bones for your bone broth.

Ingredients

Prep time: 15 minutes

Cook time: 12.5 hours

Utensils: Slow cooker, storage jars

Grass-fed bones (lamb, chicken or beef)

1 Onion

4 garlic cloves

2 Bay leaves

1 Fresh ginger, 2cm piece

1 Cinnamon stick (or 1 tsp ground cinnamon)

1 tbsp Salt Organic vegetables (anything you have in your refrigerator will do, like carrot, a small piece of celeriac and parsnip)

Fresh herbs (any that you have on hand like rosemary & thyme)

1 tbsp Apple cider vinegar

3 L. Water


Method

1. Roast your grass-fed bones, onion and organic vegetables for 30min at 200C/390F.

2. While you roast your bones and vegetables, add all remaining ingredients, except for the water, into your slow cooker. Once your bones and vegetables have roasted, add them to your slow cooker. 

3. Fill your slow cooker with water. Cook on low for 12 hours. 

4. Remove the bones and vegetables and drain your bone broth using a cheesecloth.   

You can store it in airtight containers for up to 5 days in your refrigerator or freeze for longer. The acidity from the apple cider vinegar in this bone broth recipe helps to break down the collagen and extract the minerals from the bones, thus making it more nutritious.
