Easy Paleo Lamb Meatballs

Meatballs are the perfect addition to your paleo meal prep. These are so easy to make (especially because they are oven baked) plus, they are incredibly versatile and can be added to a variety of dishes for any meal of the day.

I love to pair them with roasted root vegetables and some sliced avocado, or tossed in zucchini noodles and drizzled in my basil pesto. If I have these for breakfast, I will usually add a side of freshly cut cucumber. Your choices are endless!

Ingredients

Prep time: 10 minutes

Cook time: 25 minutes

Servings: 10 meatballs

1kg ground Lamb, grass-fed

1 cup kalamata olives, pitted and halved

1 egg, beaten

2 tbsp sea salt

1 tbsp garlic powder

1 tbsp onion powder

1 handful of fresh parsley, chopped


Method

1. Preheat your oven to 190C/375F.

2. Add all your ingredients to a bowl.

3. Use your hands to combine all the ingredients and roll the mixture into balls.

4. Add the meatballs to a baking tray and bake in the oven for 25 minutes.

5. Allow to cool and store in an airtight container. You can refrigerate them for up to 4 days.

Meal prep tip: these freeze really well. I usually freeze half the batch.
