Paleo/AIP Beef Stew Slow Cooker
The weather in Stockholm is getting chillier and darker, which means the call for soups and hearty stews get louder and louder. Right?!
If you know me and have been following along for a while, you will know that my slow cooker has been my trusty friend since starting this AIP journey! It’s the best addition to any kitchen because it requires minimal effort to cook a delicious meal! This recipe is one I am sure will make you happy and warm inside - literally and figuratively.
What is a good substitute for soy sauce?
You will need coconut aminos for this recipe. Coconut aminos are made from the sap of coconut trees and are an AIP and Paleo compliant, gluten-free substitute for regular soy sauce.
If you are new to the Paleo and AIP world, be sure to add this as one of your kitchen staples moving forward.
Ingredients
Servings: 6
Prep time: 20 minutes
Cook time: 6.5 hours
500g/1lb cubed beef, grass-fed
1 tbsp coconut oil
1 onion, finely chopped
2 tsp garlic powder
2 tsp onion powder
2 tbsp sea salt
2 bay leaves, crushed
6 large carrots, peeled and chopped
4 large parsnips, peeled and chopped
1 punnet mushrooms, halved
2.5 cups bone broth
3 tbsp coconut aminos
2 handfuls of fresh thyme, roughly chopped
Method
1. You will start by browning your meat in a separate saucepan. Heat a saucepan on medium heat and cook your onion till translucent.
2. Add your cubed beef together with 1 tbsp sea salt, the crushed bay leaves, 1 tsp garlic powder, and 1 tsp onion powder. Cook till your meat has browned for approximately 5min.
3. Add all the remaining ingredients (the chopped vegetables, the broth, the remaining herbs, and spices) into your slow cooker.
4. Once the meat has browned, add it to your slow cooker and mix it all to combine.
5. Secure the lid of your slow cooker and cook for 6.5 hours on low heat.
6. I usually stir the ingredients halfway through the cook, but if you miss this step, you are still good (careful with the steam as you open your lid).
7. Top with any other fresh herbs you enjoy like rosemary or thyme, and serve.
Meal prep tip: these freeze really well. I usually freeze half the batch.
